The Best Zucchini Bread

Yum!

Remember the giant zucchini I picked a back a while ago?
Well I ended up getting another one.  I had to figure out what to do with these zucchinis fast!  Then I remembered that my Mom made zucchini bread some time back that was DELICIOUS.  She got it out of a church cookbook we have, and I am gonna share it with you because I am nice like that.  Heehee!
Everything you need.
Zucchini Bread

- 3 eggs, beaten
- 1 3/4 cup sugar
- 3/4 cup oil
- 1 Tbsp. vanilla
- 2 cups flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. baking powder
- 2 tsp. baking soda
- 2 cups unpeeled, grated zucchini
- 1 cup chopped walnuts

Directions:  Mix ingredients in order given.  Bake in 2 sprayed loaf pans 1 hour at 350 degrees.
Grated zucchini.
I just can't stay away from this stuff.  If it is around, I eat it until it is gone.  It is so moist and delicious!!

  3. mmmm...foooood!!!....lol. I'm not sure if I have ever had zucchini bread??? Thanks for the recipe! If you were really "nice like that", you would of invited a teleportation(sp?) device first, then sent some to all your followers....hehe. Your counter tops looks neat! I haven't over-hauled my kitchen yet.

  4. This is one of our favorite ways to eat zucchini! The kids just eat it up whenever we make eat. :) I may have to make some tomorrow. ;)
